Hühnerfrikassee? Of course I veganized it and it tastes just like the original!
I'm a bit stressed at the moment and don't have much time, so I prefer to cook dishes that are quick and easy and ideally have all the ingredients at home. My chicken fricassee recipe is perfect for situations like this! It's delicious on the table in 15 quick minutes! And if you cook enough of it, you'll have something left over to warm up the next day!

Vegan chicken fricassee tastes like the original

My vegan chicken fricassee is characterized by its closeness to the original, with its mild yet rich taste. The creamy sauce is slightly spicy and slightly sweet and sour, while the vegan chicken, capers and vegetables provide a pleasant texture and savory flavors.

With my modern, vegan adaptation of this traditional classic, you can enjoy chicken fricassee in a climate-friendly and cruelty-free way.

Traditional German cuisine

Chicken fricassee is a delicious dish of German cuisine that is very popular in many homes and restaurants. It is a creamy stew dish that traditionally consists of tender pieces of chicken, peas, carrots, asparagus and capers, as well as a creamy sauce.

As you can see in this recipe, chicken fricassee can also be easily prepared vegan. Without having to miss out on the chicken filling. I make the seitan myself, using a very simple basic recipe that you can of course also use for other dishes.

Vegan with homemade seitan chicken or with a purchased alternative

In this recipe for chicken fricassee, I'll show you how to quickly make a kind of chicken out of seitan. The Seitan is kneaded within a few minutes and then it only needs to be cooked in a broth for 10-15 minutes and cut into small pieces for the fricassee. It's worth making the chicken meat yourself because it tastes better, is much cheaper and saves packaging waste.

Nerd Fact: The term fricassee originally comes from French cuisine. Fricassee (French fricassée) means “smorgasbord”.

From a culinary point of view, fricassee is also a ragout in French cuisine. Similar to the blanket, it can be prepared in different ways with different ingredients.

Ingredients for 4 portions of chicken fricassee:

Simple, homemade, vegan seitan chicken:

90 g Seitan-Fix (seitan powder, wheat gluten)
1/2 tsp salt
1 THE Soybean
125ml water
1 THE Sesamöl
1 liter broth

If you want it even easier and faster:

2 cans of mock chicken, chicken chunks or other ready-made, vegan chicken meat alternatives
1 liter broth


2 EL vegane Butter
2 tablespoons flour
300 ml broth
100 ml vegan cream
1 class Jar/can of mushrooms, sliced
1 tbsp capers
500 g Leipziger Allerlei (frozen, asparagus pieces, peas, carrots)
1 tbsp lemon juice
1 tsp sugar

1 cup (approx. 250 ml) rice


Simple, homemade, vegan seitan chicken:

Mix the Seitan Fix with the salt. Mix the water with the soy sauce, then knead both together to form a firm dough. Add the water little by little until you have a firm dough without dry spots. If necessary, use a little less or more water.

Bring the broth with the sesame oil to the boil and cut the lump of seitan into slices about one centimeter thick. Cook the seitan in the broth for 10-15 minutes, remove and let cool. Then cut the seitan slices into bite-sized pieces for the fricassee.


Cook the rice until done. To do this, put the rice in a small pot and add twice the amount of water. In this case 2 cups. Also 1/2 teaspoon salt.
Then you boil the rice in water without a lid. Once it boils, you can turn down the flame and let the rice simmer until the water has evaporated. Stir occasionally.

It now continues like this for purchased vegan chicken. If you make homemade chicken meat, you can skip this step:

While the rice is cooking, cut the vegan chicken into small pieces. Bring the liter of broth to the boil and cook the vegan chicken in it for about 2-3 minutes, then drain.

This is how it works for purchased and homemade meat with the vegan chicken fricassee:

Heat the vegan butter in a saucepan, then stir in the flour with a whisk.

Gradually stir in the 250 ml stock until you have a nice roux.

Add the vegan chicken, vegetables and mushrooms.
If you can't find Leipziger Allerlei in the freezer section of your supermarket, you can also take 350 g of peas and carrots and use 150 g of asparagus pieces from the jar.

Bring to the boil briefly, then add the cream and capers and simmer briefly again for 2-3 minutes.

Then stir in the sugar and lemon juice, season with salt and pepper and serve the vegan chicken fricassee with the rice.
